We had such a wonderful Spring Break around here! The weather was AMAZING--warm, sunny and everything blooming! We spent lots of time outdoors enjoying the warmth and beauty. I must admit though that dinner time was a bummer last week. Taking a break from menu planning for spring break was NOT a good idea. I had that old familiar stress starting at about 4:45 pm when I realized that the children would be hungry for dinner soon and the husband would be coming home tired and hungry and I had no idea what we were having! Augh! So, needless to say I more committed than ever to come up with a menu today for the week! For me having a menu plan is a good thing! So here we go...
Monday--TJ's Family Birthday dinner...per his request..
Calzones, fresh Cantaloupe, Carrots with ranch dip
Poppyseed Cake
Tuesday--Sunflower Ceasar Salad, Multigrain soft pretzels, Roasted Balsamic Asparagus, Grapes
Wednesday--Black Bean Burgers on whole grain buns, applesauce with cinnamon, Frog Eye salad (mostly just because I think my boys will love it for the name)
Thursday--Easy Crusty Cod, Asian Sesame Noodles, Sliced apples
Friday--Pizza for TJ's friend Party, carrots, grapes, chips and Cupcakes
Saturday--PB & J or leftovers for boys--date night for me and Brad:) Yipee!
Sunday-- We are having a newly moved in couple over for dinner--
7up Grilled Chicken, Honey Whole Wheat rolls, Zuchini Yellow squash with Pinenuts Saute, Spinach salad with apples and feta. Vanilla Bean icecream with fresh berries

Makes me hungry thinking about it all. We had Cajun Mahi Mahi, jubilee rice, sweet potato fries, and fruit salad tonight. My family has really learned to love mahi mahi and tilapia.
Yummy!! I so need to take some cooking classes from you. My husband's family loves frog eyed salad. That is so cute that you are making it because your boys will love the name! Your such a good mommy!

The only meat my kids usually get is turkey or tuna sandwhiches once a week :) I would love to see more of these recipes on your families blog, or on this blog.
