Weekly Menu


Happy Monday!  Last week my friend flew in from Utah.  She had never been to the South and I had SO much fun showing her around.  I will have to a do a highlight post of all our fun.  It was a fun week!  How was yours?  Well the weather has finally turned cold here.  I am more than ready for soup weather:)  Yum!

Friday:  PIZZA night as always, fresh veggies and ranch, spinach on the side for those of us who find it a must sprinkled on pizza--yum!!:)

Our Menu


With our recent Celiac diagnosis around here, I am trying some new gluten free meals out.  This new way of cooking for my family has turned my world upside down, but  I am slowly figuring it out--thanks in part to so many of your wonderful suggestions and help!!.  One thing, I am finding is that gluten free can be very expensive!  I thought that our whole family would eat that way, but honestly I feel like I can't afford it!  Lately, I have been mostly feeding my family food that is naturally gluten free, but at some of our meals I provide GF bread/treats etc for only my two Celiac boys.  They are fine with that, but sometimes my 5 year old cries that he wants their waffle/ cinnamon roll etc.  He doesn't think it is fair that they get to have special stuff!  I know  I tell him, life is just not fair, darn it! :)

Two Week Menu
Monday:  BBQ Chicken, green salad, rolls, oranges
Tuesday:  Honey Mustard Chicken, Rice Pilaf, Spring mix with blueberries, feta and almonds salad
Wednesday:  Marinara Sauce with spicy Italian Sausage over Quinoa Pasta, ceasar salad, grapes
Thursday:  Quinoa Stir Fry, orange slices, cucumber slices
Friday: Grilled Hamburgers, baked fries, fruit salad, 
Saturday:  Pizza night!  *I found frozen gF pizza wheels:)  Salad,  apple slices
Sunday:  Bean Tosatados, chips and salsa, grapes

Monday:  Beef Stroganoff, GF noodles, salad, steamed carrots
Tuesday:  Greek Quinoa with Avocado, watermelon slices
Wednesday:  Garlic Basil Chicken Drumsticks, roasted veggies, grapes, green salad
Thursday:  Southwest Wraps (I found GF tortillas), guacamole, fruit

*Notes:  I like to add fresh veggies and fruit as sides for every meal,  I feel like then we need less of the main dish or meat...more healthy in my opinion that way.  I make those sides for the most part super easy ...as in sliced fresh fruit or vegetables that I have on hand.  Also I love salads and you will find so many wonderful ideas and recipes here.

Menu Monday (2 week menu--yay!)


Yesterday, I filled out this menu planner.  Print it off for free here.
I drew a line down the middle of each day and planned two weeks at once.
I am feeling pretty good about my two week menu plan and grocery list.  
I plan on going shopping today and I am going to see how everything lasts for 2 weeks, although I really don't mind stopping at the grocery store once a week for perishables, like produce.
Does anyone plan 2 weeks in advance?  How does it go for you?


Also- I now pick themes to guide my planning:
 Monday--Comfort
Tuesday--Italian / Indian
Wednesday--Fish / Meatless
Thursday--Mexican/Asian
Friday--Leftovers (date night Mom and Dad)
Saturday--Pizza Night

Also--the sides listed are not set in stone.  I do like to serve at least one veggie and one fruit with most of our dinners.  My goal is to fill my boys up with nutritious fresh food and make dinner a happy time.  With that in mind, I try to have at least one or two things each person likes on the dinner table.  I will see what looks good at the store and what is on sale/ in season when it comes to sides.

As you know, most recipe I use are on The Sisters Cafe.  If you can't find--let me know and will be happy to share the link or the recipe:)  And please by all means share you menus and/or favorite recipes with me!  I am always looking for new ideas!!

Menu Monday

Enjoying a Sunday night treat of Pizzookie a gooey delicious mix of warm cookie smooshed in a pie plate straight from the oven topped with ice cream--seriously YUM! Ours was gone before the pie dish was cool:) Recipe here. Make it, your family will thank you! Yes, I think Pizookie may have been the highlight of our weekend for the boys! How was yours? I spent Friday and Saturday in Nashville with a group of friends for 'Time Out for Women'. It was inspiring, uplifting and so much fun!! I would love to share a few highlights of the conference on a later post. I also did some shopping in Nashville finding some super cute and comfortable Born sandals on clearance (score!) and tried 'Chipolte' which I LOVED!! Have you been there? It was the first time I found a good fresh mex out here in the South. Now I am hoping they open one in Chattanooga. Anyway, I am very tired now that we have put our clocks forward for Day Light Savings, but so happy that it is Spring time! The trees are starting to bloom here and birds are chirping--yay! OK I need to get back on track with my Menu Mondays. The problem is I don't feel like making it a post--so I think I will start posting my weekly menu on my sidebar. Hmm I will look into that for next week. Anyway, here we go....

Menu Monday

First of all I have LOVED all your comments and emails regarding the challenge! Yay--it so fun to do this together. If you want to join the fun --read more here:)

How is your 'Healthy and Strong Challenge #1' going? Mmmm I am LOVING my real food efforts. The picture above was my delicious snack the other day--wholegrain toast with some of my{favorite} homemade buttermilk dressing fresh tomatoes and cucumbers. Yum! I know how silly to take a picture--I think fresh fruits and vegetables are beautiful--Iam kinda weird like that:)

I got so excited about posting about the challenge yesterday, I forgot to add my weekly menu. So here we go...a little late:)

Monday--We had a major storm blow thru and the power was out for hours around dinner time--so "Daddy cooked" --code word for Brad picked up his favorite...pizza:), carrots, apple slices

FamilyHomeEvening treat: Cowboy Cookies

Tuesday--Sunday leftovers--favorite pork roast, mashed potatoes, salad, brocoli

Wednesday--Pesto Chicken Sandwich, roasted garlic cauliflower, cucumber spears, mandarin oranges

Thursday--Wild Alaskan Salmon, baked brown rice pilaf, spinach salad with rosemary balsamic dressing, fresh papaya (bought one for the first time at Costco yesterday)

Friday--Date night with my honey--boys quesidillas, green smoothie

Saturday--Whole Wheat pasta, with roasted tomatoes, natural roasted red pepper chicken sausage, zuchini and parmesan cheese. Crusty bread, applesauce

Sunday--Butter Chicken, basmati rice, Naan (I am sooo excited to try this recipe--Butter Chicken is one of my favorite dishes at our favorite Indian Restraunt--if it turns out great, I will be posting it on The Sisters Cafe)

Menu Monday

(We have been LOVING this buttermilk dressing lately--yum!)


My husband has been out of town most of this month--and let me tell you being a single Momma of 5 boys is exhausting! I have to admit that I have not been the best at sticking to my weekly menus lately. I am so happy that it is almost February and we will have a Daddy home again! Yipee! Anyway, I am in survival mode and this weeks menu is simple and quick! I am up to my eyeballs in organization projects, namely a re-vamp of my Family Command Center and job chart. My boys have been so busy with basketball and wrestling since the New Year that we have let things slide. I am ready to get back on track and have more help with keeping the house clean and tidy. I find that I am a much sweeter Mom when my house is not a wreck, you know?! Plus I think it is vital that boys learn to do housework.

I am sure their future wives will thank me someday:)

Monday--Costco rotisserie chicken, rolls, buttermilk dressing, greens, carrots and cucumber spears. Family Home Evening treat--Blue Bell ice cream cones

Tuesday--Whole Wheat Spaghetti and meatballs from the freezer with bottled sauce from the pantry, sauteed zucchini, green salad, tangerines

Wednesday--Quesidillas with chicken (leftover rotisserie) and black beans, chips and salsa, apple slices

Thursday--Tuscan lentil soup, muffins from the freezer--unless my boys end up with a Wrestling match that night and then it will be breakfast burritos in the car:)

Friday--Pizza -from the local pizzeria--served with baby spinach, carrots and cucumbers

Saturday--Leftovers, or nachos for boys--DATE NIGHT for Mom and Dad (can not wait:)

Sunday--Super Bowl FOOD--lots of fun appetizers! woo hoo!
We had some sunny days here in the South over the weekend--it was heaven:)

roasted winter vegetables, no knead artisan bread, green salad with grapefruit.

Stromboli (Coleman's request), 5 minute marinara, veggies and buttermilk dressing for dipping.

Saturday: Date night for Connor and Me (Brad will be out of town so we are doing our Mom and son date night!!) Leftovers for everyone else

Crustless Quiche, multigrain banana bread, mandarins

Menu Monday and a Tennessee SNOW Storm!!

We woke up to some serious snow again!! Over 8 inches!!

We had to pinch ourselves to make sure we weren't dreaming of our days in Utah.We are definetly in the South though, because school is cancelled today and tomorrow and possibly longer due to the "inclement weather"! There are no snowplows so we really are snowed in, but the boys are lovin life! They are all decked out in the rarely used snow clothes, and building snow forts and shoveling the walks. In fact we are one of the only people on the block with a snow shovel, so the boys were already hired to do some shoveling. They said they would do it for free, but our sweet neighbor insisted on paying them. Exciting!!
This is a crazy year for the South! Lucky us!


I guess that means it is time for some snowball soup!!

Menu Monday

One of my goals for 2011 is to make sure my meal time is not only nourishing for the body but also (and more importantly) for the soul.
I want my family, my most important responsibility, to feel loved and cherished as I gather them around the table each evening for dinner. A time I hope they can look forward to all day. You never know what kind of day they have had "out in the world". I may have no control over how they are treated outside of this house, but I do have great influence in my own home, especially in my little kitchen:)
So more than ever I am gong to put an emphasis on mealtimes that are happy and nurturing. I want my family to know that they are important and a priority to me. I will do this by PLANNING ahead, setting a simple but inviting table, simplifying my meals when my days are busy, and above all, making a conscience effort to bring a good mood to the table and foster a feeling of love.

We don't go back to school until Wednesday--so I thought Tuesday would be a good night to have our pasta party. I have been dying to try my new pasta maker I got for Christmas (yah!) Our last day of having nothing on the schedule:) That will end-- with two boys on basketball teams and two on the wrestling team. January will be BUSY!!

Monday-Baked potato Bar (leftover ham, cheese, fresh steamed broccoli, sour cream, chili), bran muffins, green salad with buttermilk dressing Family Home Evening Treat: Blue Bell Ice cream cones--the best!

Tuesday--Make your own Fresh Pasta Night, 5 minute marinara sauce, Alfredo sauce, grilled sliced chicken, sauteed shrimp, sauteed mushrooms and zucchini, Caesar salad

Menu Monday

I can't believe that Christmas is in two weeks! I am so excited, I can hardly stand it. There is something so magical and joyful about sharing this special time of year with children. I love it. Unfortunately my family has been fighting the flu , so last week we did not stick with our planned menu very well. We had several nights where I just made what sounded good to my little sickies... soft eggs and toast, pancakes or simple noodle soup and smoothies. So if some of the recipes look like repeats that is why. Tomorrow I am making our traditional dinner for the first snowfall of the year... "Snowball Soup" (matzo ball soup) because snow is on the forecast! We had just enough flakes swirling around Sunday night to have school cancelled for Monday! The boys were thrilled! I am looking forward to the next two weeks very much. We only have a few more days until my boys are all home for the Christmas break. Such a happy time!

Wednesday: Thai Peanut Chicken, fresh pineapple, roasted broccoli
Thursday: Gingerbread Waffles, poached eggs, green smoothies
Friday: Date night for TJ and I (the nutcracker:)--noodle soup or nachos for Dad and boys
Saturday: Homemade Calzones, greens, carrots and dip
Sunday: BBQ (shredded beef in crockpot) on rolls, calico beans, baked potatoes and green salad with buttermilk dressing

Menu Monday

Happily we have been invited to share Thanksgiving with friends, so I will not be cooking the turkey this year. Since we will not be having the big dinner at my house, I am going to start getting out our Christmas decor:) I can not wait!!

Monday: Peasant Pasta, roasted cauliflower, green salad, crisp apples
Family Home Evening treat: Oatmeal Cookie Bars
Tuesday: Chili Verde (from freezer), tortillas, black beans, toppings, salad, oranges
Wednesday: Chickpea and Noodle Soup, Tuna Melts, fresh pineapple, carrot sticks
Thursday: TURKEY and all the fixins:)
Friday: Date Night for me and the Mr.--leftovers for the boys
Saturday: Homemade Pizza, garden salad, crudits and dip

Menu Monday

You know I love to cook, but lately I have been thinking about simple meals. I want dinner time to be more about my family and less about the food. I still want to eat something delicious, wholesome and even interesting when I sit down for supper, but not at the expense of relationships or my nerves. I want the evening hours in my home to feel good for all the souls that live under this roof.

This is a challenge for me. Have you ever noticed that children are more needy in the evening. For that matter, I am too! We are tired, and sometimes 'beat up' at the end of the day. I don't want to feel frazzled and in a mess every evening trying to get dinner on the table. What I really want to do is slow down, give myself a break and enjoy my boys.
I have been trying to plan ahead to make the actual dinner hour simpler. I am trying to make the dish (or at least do as much prep as possible) in the morning. This has always been my goal, but that class I taught about family dinners inspired me to do better. So, here is my menu for the week, but my focus is to create a happy environment at dinner time. I sure hope I can be successful:)

I joined a weight loss challenge during the holidays...I know I am crazy:)

Monday: Dad brought home pizza from Rosellis, greens (we like greens sprinkled on our pies), carrots and buttermilk dressing dip.
Tuesday: Thai Coconut Shrimp, jasmine rice, roasted cauliflower, apple slices
Wednesday: Slow cooker Vegetable Barley Soup, artisan no knead bread
Thursday: Peasant Pasta, mandarin oranges, Steamed Broccoli
Friday: Date night for Mom and Dad:) nachos for the boys with carrots and apples
Saturday: Church function that includes dinner
Sunday: Autumn Harvest Pork Roast with potatoes, sauted zuchini, Honey Whole Wheat rolls
