Menu Monday
Monday--Costco rotisserie chicken, rolls, buttermilk dressing, greens, carrots and cucumber spears. Family Home Evening treat--Blue Bell ice cream cones
Tuesday--Whole Wheat Spaghetti and meatballs from the freezer with bottled sauce from the pantry, sauteed zucchini, green salad, tangerines
Wednesday--Quesidillas with chicken (leftover rotisserie) and black beans, chips and salsa, apple slices
Thursday--Tuscan lentil soup, muffins from the freezer--unless my boys end up with a Wrestling match that night and then it will be breakfast burritos in the car:)
Friday--Pizza -from the local pizzeria--served with baby spinach, carrots and cucumbers
Saturday--Leftovers, or nachos for boys--DATE NIGHT for Mom and Dad (can not wait:)
Sunday--Super Bowl FOOD--lots of fun appetizers! woo hoo!

Menu Monday
Monday: Quinoa Vegetable Soup (I am going to make the above soup with a few more veggies and no chicken. Quinoa is very high in protien), corn bread, fresh pineapple
Family Home Evening Treat: Fresh Fruit kabobs with creamy dip
Tuesday: Sloppy Joes (I asked for requests and TJ my 11 year old wants this:), french bread rolls, sauted fresh broccoli with garlic and olive oil, tangerines
Wednesday: Crockpot Sweet and Spicy Chicken, tortilla chips, cheese, green salad, refried beans, apple slices
Thursday: Tilapia, roasted winter vegetables, no knead artisan bread, green salad with grapefruit.
Friday: Stromboli (Coleman's request), 5 minute marinara, veggies and buttermilk dressing for dipping.
Saturday: Date night for Connor and Me (Brad will be out of town so we are doing our Mom and son date night!!) Leftovers for everyone else
Sunday: Crustless Quiche, multigrain banana bread, mandarins

Menu Monday and a Tennessee SNOW Storm!!
We had to pinch ourselves to make sure we weren't dreaming of our days in Utah.We are definetly in the South though, because school is cancelled today and tomorrow and possibly longer due to the "inclement weather"! There are no snowplows so we really are snowed in, but the boys are lovin life! They are all decked out in the rarely used snow clothes, and building snow forts and shoveling the walks. In fact we are one of the only people on the block with a snow shovel, so the boys were already hired to do some shoveling. They said they would do it for free, but our sweet neighbor insisted on paying them. Exciting!!
I guess that means it is time for some snowball soup!!
Monday: Snowball Soup or Cream Cheese Chicken Chowder (we will take a vote), tangerines, whole wheat bread. FHE treat: Mom's peanut blossom cookies
Tuesday: Tacos, refried beans, broccoli, mandarin oranges
Wednesday: Chicken pesto sandwich, carrot sticks, sliced apples
Thursday: Tilapia, roasted winter vegetalbles, Pumpkin muffins, spinach salad with poppyseed dressing (From last weeks menu--never happened:)
Friday: Spaghetti and frozen meatballs, green salad, buttermilk dressing, grapes
Saturday: Leftovers--yah! Date night Mom and Dad
Sunday: Ranch Pork roast, wonderful mashed potatoes, buttermilk rolls, spinach salad, and Coconut Cream Pie

Tuesday--Make your own Fresh Pasta Night, 5 minute marinara sauce, Alfredo sauce, grilled sliced chicken, sauteed shrimp, sauteed mushrooms and zucchini, Caesar salad
Wednesday--Hobo Soup, 5 minute artisan bread, sliced tangerines
Thursday--Tilapia, Roasted Root Vegetables, pumpkin muffins, fresh pineapple
Friday--Leftovers--yum yum!
Saturday--Date night for Mom and Dad--Nachos, apples and carrots sticks for boys
Sunday--Crock pot Tomato Basil Parmesan Soup, Paninis, green salad, Cowboy Cookies

Menu Monday...a little late

I am trying to plan my menus two weeks in advance now. Just looking for ways to save time--especially this month! I think it will be nice to plan just twice a month. I have included links to all the recipes on Sisters Cafe for you. And the recipes that are not listed will be coming soon if they turn out to be delicous!

Friday: Pizza, carrots and dip, green salad with buttermilk dressing
Saturday: Date night--cheese crisp and green smoothies for boys
Sunday: Favorite Pork Roast, spinach salad with bleu cheese and pomegranate, Roasted Red Potatoes, rolls from freezer

Menu Monday

You know I love to cook, but lately I have been thinking about simple meals. I want dinner time to be more about my family and less about the food. I still want to eat something delicious, wholesome and even interesting when I sit down for supper, but not at the expense of relationships or my nerves. I want the evening hours in my home to feel good for all the souls that live under this roof.
This is a challenge for me. Have you ever noticed that children are more needy in the evening. For that matter, I am too! We are tired, and sometimes 'beat up' at the end of the day. I don't want to feel frazzled and in a mess every evening trying to get dinner on the table. What I really want to do is slow down, give myself a break and enjoy my boys.
