Well, sadly I have just returned from dropping my parents off at the airport in Nashville. It is a 2 1/2 hour drive away, so I am pretty tired and missing them already! It was so fun to have them here. We have just finished Family Home Evening and popped everyone into bed. I am now getting my week organized. First thing--our weekly menu...
Monday-- Brad picked up a pizza, fresh pineapple, carrot sticks
(Since I spent my afternoon in the car Brad offered to "cook" dinner)
Tuesday--Roasted Vegtable Soup, whole wheat Rosemary Asiago Chop Bread
Wednesday-- Stewed Lentils and Tomatoes, Roasted Cauliflower, Harvest Bread
Thursday-- Green Curry Chicken (substitute yukon gold potatoes for the chicken), brown basmati rice, orange wedges
Friday-- Black Bean Quesadillas with Avocado Salsa, carrots, apple slices
Saturday--Date with Brad -- boys get PB & J sandwiches , chips and fruit:)
Sunday--Non breaded version of this Chicken Parmesan (I can make this on Saturday--and just throw into the oven to bake after church), whole wheat angel hair pasta, candied walnut salad and
Chocolate Chip Oatmeal Bars

I hope that you had a wonderful weekend with your parents! What a 'sweet' surprise for the boys when they arrived! And I love your weekly menus--great ideas. I'm trying to do the same (resolution #3)! :) Miss you all!
I've been so busy today that I haven't made my menu for this week, so I'm copying you!!! We can think of each other at dinner knowing we will be "sharing" a meal.

yummy! What a good idea to sub potatoes for the chicken in the green chicken curry. I'll have to try that. Sounds like a delicious and healthy week!
