Weekend Recap and a menu

Disclaimer: Coleman would like to state that he is in fact NOT a cowboys fan...it just happens to be the only football uniform with a helmet that we have in our dress up box.

Our weekend included:

Family movie night (Disney's Planet Earth) with lots of popcorn and treats:)

Basketball game for TJ--He is a mighty good point guard!

Cleaning our home--it needed it!

Date to Avatar 3D with my honey--I liked it, he did not. My guy is just not into sci-fi.

RAIN, rain and rain which drenched us going to church!

Football games--we are all sad that Favre didn't make it into one more Superbowl... but we are very HAPPY that this BYU grad is going...go Colts!!

Discussed this as a family--the boys decided (on their own and enthusiastically) to donate ALL their money and are going to keep the people of Haiti in their prayers.

All in all it was a nice weekend. How was yours?

Now on to my goal to have a weekly menu.
(By the way, I am thinking about putting this on my sidebar instead of a post.)

Monday-- Ham fried Rice, Stir fry Veggies, mini Egg rolls (from my freezer)

Tuesday--Caraba's Lentil Soup, Honey Wheat Rolls, Salad

Wednesday--Spicy Black Bean Cakes with Lime Sour Cream, Sliced apples

Thursday--Thai Peanut Chicken, Lemon Spinach Salad (apples instead of strawberries)

Friday--PIZZA NIGHT (of course the boys always request boring pepperoni--but I am going to make this one too)

Saturday--Date with Brad...boys get leftovers

Sunday--Italian Restaurant Chicken, parmesan spaghetti squash, Carver Salad, French Bread

Sounds like a fun weekend with the Christensen football family! You are such a good mom, I want to be in your family:) Seriously, you are always coming up with fun family activities with your boys. I hope I can be like that eventually. And Matt and I are with you on Avatar, we LOVED it, but does that even surprise you?

Ok Melanie -

I seriously need some pointers from you on how to fit it all in. Even with five, you manage to do so many fun things and get tons done.

We just found out that we, too, are expecting our fifth child. I don't even know where to start on budgeting time and energy.

How in the world is it done?

Glad to see that Coleman STILL loves football! :) (was it ever a question!) And how funny, I've had the black bean cake recipe on my desktop for weeks now...let me know what you think. We, too, loved Avatar...although we didn't see it in 3D. I bet that would've been great! Sounds like you had a busy, but fun weekend!

Cool pictures of Coleman! I loved the disclaimer. :) Sounds like you had an exciting weekend. I SHOULD have cleaned my house... maybe today. Wish I were there to go to TJ's game. How come Coleman isn't playing any sports? Anyway, your menu looks totally yummy, as usual! Love you, sis. Mindy

how do you have so much energy?!
Do you plan your menus out each week and then go to the store to get all of the ingredients? How do you come up with all of these yummy recipes? I'm so bad at planning and store shopping! :)

The menu sounds delish - I made the veggie wraps last night that you posted about and we LOVED them!

Your weekend sounded so fun! Eric and I went to Avatar too but we both loved it! :) It was just a really fun movie to experience!

I LOVE LOVE LOVED the pics of Coleman and the disclaimer!! Ha ha - he is so funny. We are not cowboy fans at our house either! And we were really sad that Favre didn't make it to the Superbowl too (although it's exciting for New Orleans to be in it for the first time ever). Also, we were rooting for the Colts too... so you need to tell him and the rest of the boys that we do have a lot in common with football! :) I miss you guys so much... I wish we could have seen the movie together and spent these past rainy days together... oh well. i love you!! xoxoxoxoxox
