This week Brad and my two oldest boys are leaving on Wednesday night to go skiing in Utah. This is gives me the opportunity to experiment with some new and "interesting" dishes--such as the Matchstick Pasta recipe and the Iraqi cod dish. (Brad hates fish:) I think I am going to celebrate Easter the following weekend when my hubby and big boys are back. It would feel too weird without my whole family home. I hope you all have a Happy Easter!
Monday--Baked potato Bar, vegetarian chili and cheese, ceasar salad, garlic bread
Tuesday--Chicken Tortilla Soup, fresh pineapple, Tortilla Chips
Wednesday--Quinoa and Corn Griddle Cakes with Black Bean Salsa, cantaloupe
Thursday--Matchstick pasta with Kale, Pistachio & Pomegranate, veggies & dips
Friday--Going out with my little boys on a Mom date:)
Saturday--Picnic in the park with Wraps, chips, and fruit
Sunday--Saluna (Iraqi Sweet and Sour Fish), sauted zuchini, whole wheat rolls, strawberries

Sounds good. I am excited to see how you like all those recipes. Iraqi sweet and sour fish and matchstick pasta especially.
wow - sounds like a very interesting menu! I'm waiting to hear how the quinoa and corn griddle cakes turn out... they sound good!
