Hello Friends!
My month long vacation to Utah was heavenly, but I am finally back home and ready to be organized again. I actually got home last Sunday night--but my kitchen was a torn up mess. We scheduled to have some remodeling done while the boys and I were gone and unfortunately it was not finished as planned. In fact, it is still not done. We have a painter scheduled for today and a tile backsplash to be installed that I don't believe is even on the schedule yet! Hopefully this week! I am already LOVING my new and improved kitchen--but augh--the mess of remodeling is so annoying, especially when it is the kitchen, the hub of our home! As soon as it is done I will share some pictures. I have a rather small kitchen, but I think we have successfully made some changes to maximize the space. It already feels a 100% better! I am excited to start using my new cooking area. So, with that in mind, here is what is on our menu this week:
Monday: Wheat Berries with Smoked Turkey and Fruit Salad, birthday cake for Cannon:)
Tuesday: Honey Lime Enchiladas, homemade refried beans, garden salad with ranch dressing
Wednesday: Thai Coconut Curry Shrimp, fresh green beans, pears
Thursday: Black Bean Burgers, watermelon slices, carrots and hummus, sunchips
Friday: Homemade Pizza, sliced nectarines, spinach salad with cherry tomato and pinenuts
Saturday: Date night:) boys get cereal or leftovers-yum!
Sunday: Chicken and asparagus stir fry with brown rice, grapes, sneaky black bean brownies

Glad you're back! Love Menu Monday :) It inspires me to make healthier food for my family. It was soooooo fun seeing you & the boys when you were in UT.
